
Nature is the magical cycle of life that creates unexpected experiences only masters of creativity could dream up. One such dream is our excursion today – a seaweed safari. Unexpectedly educational and fun, we learned about seaweed farming for NOMA and other Michelin starred restaurants in nearby Copenhagen.

While wading through the sand bank close to shore, protected by rubber waders, we tasted different species of the delicacy right out of the ocean. In its raw form, the salty bits taste crunchy and simple. However, transformed into dishes, they become a smorgasbord of flavors which we got to experience ourselves. Four different seaweed tasting dishes awaited us in town to further our knowledge and hone our tastebuds. One example of creative cooking is in the image below.

As our short North Atlantic jaunt comes to an end, I am thoroughly impressed by Lindblad National Geographic Expeditions’ scientific experiences; quality of guides and crew; and the purpose-built ship design setting Endurance and Resolution apart from other expedition vessels.

On the expectations/improvements side of things, there are a few items of note. Food being on top of the list. While the desserts prepared by chef Jamie from Texas were outstanding, the overall impression of meals at the buffets and at sit-down dinner service in the main dining room were mid- range at best. Portions were small (although one can ask for more – we learned); pasta lacked salt; flavored were strange at times. One would expect more from a line at this price point. It must be noted that Lindblad is a pioneer in the sustainable sourcing and food waste reduction aspects of operations which is commendable.

Safely arrived in Copenhagen, the group dispersed in all four directions on further adventures and business trips. Everyone left reassured in the line’s purpose and mission to bring scientific research and experience together in one package to further humanity’s interplay with our planet.
